Sweet Rice Pudding (Arroz Doce)

Description:

The sweetness and creamy comfort of this dessert will help us remember the sweetness of the Fatima Children and the comfort they give to us through their example of holiness.  This is a perfect breakfast or anytime dessert.

Serves: 4 people

Cook Time: 1 Hour

 

INGREDIENTS:

1/4 Cup Medium Grain Rice

3 Cups Whole Milk

3-4 Cinnamon Sticks

2-3 Slices of Lemon Peel

4 Egg Yolks

1 1/2 Cups Sugar

1 Tbsp Unsalted Butter

1-2 tsp Ground Cinnamon

½ Cup Mixed Berries

 

How To Make:

  1. In a large pot, boil water over medium heat.  When water comes to a boil, add in rice and stir.
  2. Once water is almost evaporated, add milk.  Turn heat down to medium.  Add in the peel from one lemon and the cinnamon sticks.  Stir frequently, as the rice thickens.
  3. When the rice has thickened to the consistency of porridge, remove the cinnamon sticks and lemon peels.
  4. Add the sugar and mix thoroughly.
  5. In a separate bowl, combine the egg yolks and a small amount of warm rice and mix together.  (This will prevent the eggs from curdling)  Add this mixture to the rice and continue stirring.
  6. Remove the rice from the heat and add the butter. Stir until butter is completely melted.
  7. Transfer the rice into a ceramic dish and place in the refrigerator for a minimum of 30 minutes.
  8. After 30 minutes, the rice will become the consistency of a flan.  
  9. Remove from the refrigerator and decorate with cinnamon and berries.Remove from the refrigerator and decorate with cinnamon and berries.
