Asparagus with Hollandaise & Poached Egg

Description:

Serves: 2-4 people

Cook Time: 10 minutes

 

INGREDIENTS:

3 Egg Yolks 

1/2 cup of Melted Butter 

2 tsp Lemon Juice 

1/2 tsp Paprika 

1 tsp Mustard 

1 pinch of Salt 

 

*Poached Eggs & Steamed Asparagus  (Prepare According to Your Liking)

 

How To Make:

  1. Place a non-reactive bowl over a pot of boiling water, making sure the water doesn’t touch the bowl.
  2. Add lemon juice, egg yolks, mustard, salt, and paprika.  Whisk together.
  3. Slowly drizzle the melted butter and continue to whisk until smooth and creamy. 
  4. Ladle on top of steamed asparagus and poached eggs.
