Mini Cheesecakes
Ingredients:
12 Oreos
2 8-ounce packages cream cheese
2 eggs
2 tablespoons melted chocolate
2/3 cup white sugar
1/2 teaspoon vanilla
Preheat to 350°F.
Line muffin tins with 12 paper baking cups. Separate the Oreos, placing half an Oreo in each baking cup. Crush the other halves of the Oreos and set aside. Beat cream cheese until fluffy. Add eggs, chocolate, sugar, vanilla and crushed Oreos. Fill each cup 2/3 full with mixture. Bake for 15-17 minutes, until centers are almost set. Cool before serving.
