Plantain Mash
Ingredients:
1 cup chopped onion
2 large green plantains
2 tablespoons unsalted butter
Salt and pepper to taste
1/2 cup heavy cream
Parsley or cilantro for garnish
Using a paring knife, make slits on each side of the thick peel of the plantains. Place them in a microwave on high for 30 seconds to soften the peel, then remove peel and discard.Slice the plantains into 1-inch slices and place into pot of salted water.Bring to a boil, cooking until soft. While the plantains are cooking, sauté the onions with 1 tablespoon of butter until tender and translucent. Drain the plantains once they have been cooked and reserve part of the liquid. Add the onions, butter, cream, salt and pepper. Mash the plantains, adding some of the reserved liquid if needed, for a smooth consistency. Garnish with rough chopped greens (parsley or cilantro).
