Potato Crusted Tilapia Fillets
Ingriedients:
4 tilapia fillets
2 tablespoons mustard
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
½ teaspoon cumin
1 large potato
1 tablespoon olive oil
1 tablespoon butter
Cilantro for garnish
Directions:
Preheat oven to 375oF. Prepare the fish by carefully patting both sides dry with a paper towel. Combine salt, pepper, garlic powder and cumin in a small bowl. Stir spices together and use to evenly season the fish on both sides. Brush a light coating of mustard on one side of the fish. Use a mandolin and cut potatoes in thin slices, enough to cover the mustard-brushed side of the fish. In a large oven safe skillet, melt butter and olive oil over medium high heat. Using a fish spatula, carefully place the fish, potato side down in the hot oil. When all of the fish is in the pan, cook in the hot oil for about 2 minutes. Carefully place the entire pan into the oven and cook for another 10-15 minutes. When fish is cooked, serve the fish by using a fish spatula to carefully remove the fish, keeping the potatoes in place and then gently flipping turning the spatula so that the potato side faces upward. Serve with a sprig of cilantro.
