Seafood Bread Bowl
Description:
This bread bowl has all the flavors of the Galician region of Spain. It’s a hearty dish that will warm the soul of a weary pilgrim.
Serves: 4 People
Cook Time: 30 minutes
INGREDIENTS:
1/2 Minced Onion
2 Minced Cloves of Garlic
2 tsp Olive Oil
1 Large Circular Loaf of Bread
1/4 Pound Peeled and Deveined Shrimp
1/2 Pound Clams or Mussels, Cleaned
1/4 Cup White Wine
2-3 Tbsp Lemon Juice
2-3 Cups Seafood Stock
2 tsp Pepper
1 tsp Salt
2 Tbsp Fresh Cilantro Leaves
How To Make:
- Core out a circular loaf of bread into the size of a bowl. Break the inner part of the bread into smaller pieces. Add half back into the bowl.
- In a large pan, heat 1 tsp olive oil and add the remaining cut up bread. Toast in the pan until golden brown.
- Heat the rest of the olive oil in the pan and add the onions and garlic. Saute until onions become translucent.
- Add clams or mussels and shrimp. Saute for a few minutes.
- Add the white wine, lemon juice, and seafood stock. Cook until the clams or mussels open up and the shrimp turn pinkish-white.
- Season with salt and pepper to taste.
- Add a ladle of the broth and some of the seafood into the bread bowl, along with some of the toasted bread on top. Garnish with fresh cilantro and serve.
- For individual servings, use small loaves to create individual portions.
