Sopapillas
Ingredients:
2 cups flour
2 tablespoons Crisco shortening or lard
¾ teaspoon salt
2 teaspoons sugar
2 teaspoons baking powder
¾ cup water
2 cups canola oil
Directions:
Heat oil to 375oF in a deep frying pan.
In a food processor, pulse first 5 ingredients until dough forms pea-sized granules. Slowly add water with the processor running on low until dough starts to form a ball. Knead the dough on a floured surface. Roll out dough to 1/8” thickness or less. Cut into triangles. Drop the triangles into hot oil and cook on each side till golden and the pastry puffs up. Sprinkle with powdered sugar or cinnamon sugar, or drizzle with honey while hot.
