Stir Fried Codfish with Fried Potatoes and Olives

Description:

The Portuguese are famous for cod and potato dishes, including this delicious recipe.  It’s a meal that can be eaten any time of the day!

Serves: 4-6 people

Cook Time: 30 Minutes

 

INGREDIENTS:

2 Cups Potatoes, shredded

1 Medium Onion, julienned  

2 Tbsp Olive Oil

4-5 Garlic Cloves, minced

2 Fresh or Dried Bay Leaves

1/2 lb Shredded/Dried/Salted Codfish, boneless  (Fresh cod as substitute)

2-3 Tbsp Minced Parsley

2-3 Eggs, Beaten

1 tsp Black Pepper

¼ Cup Black Olives, pitted

2-3 Cups Frying Oil

2-3 Tbsp Olive Oil

 

How To Make:

  1. Boil Codfish for 10 minutes and soak in the same water for 12 hours.  After soaking, remove the cod from water, rinse with clean water and shred into smaller pieces using two forks.  If using fresh codfish, boil the fish for 15 minutes, remove from water, dry with paper towels and shred into smaller pieces using two forks.  Set aside.
  2. Peel potatoes and shred, using a grater.  Soak potatoes in cold water for 20 minutes.  After soaking, remove potatoes from water and place on a cloth towel to dry.
  3. In a frying pan, add the oil and heat to 350 degrees.  Carefully, add the potatoes in small batches and cook until golden brown. Remove from the hot oil and place on a plate lined with a paper towel.  Set aside.
  4. In a large pot, heat the olive oil and saute the onions, garlic, and bay leaves for 3-4 minutes.
  5. Add the shredded cod to the pot and cook for 3-5 minutes, stirring occasionally.
  6. Remove the bay leaves from the pot.
  7. Add the minced parsley, egg, fried potatoes, and black pepper.  Mix to fully combine all the ingredients.
  8. Add a generous amount of pepper for extra flavor.
  9. Garnish with more chopped parsley and serve.
