White Bean, Onion and Goat Cheese Crostinis
Ingredients:
8 slices crusty bread (baguette, or other)
4-6 tablespoons olive oil
2 large yellow onions, sliced thin
1/4 cup softened goat cheese (local preferred)
2 8-ounce cans white beans (navy), drained and rinsed
2 slices bacon, diced
Fresh parsley for garnish
Preheat oven to 450°F. Brush slices of bread with 1 tablespoon of olive oil, arrange on baking sheet, and toast until crisp and slightly darkened, about 8-10 minutes. Heat 1 tablespoon olive oil in pan over medium heat, add onions and sauté until caramelized, reducing heat to medium-low after initial sweat around, about 10-15 minutes. In a small saucepan, heat over medium-high heat and render bacon. Remove the bacon and heat beans in bacon fat for 3-4 minutes. Evenly spread softened goat cheese on toasted bread. Spoon beans over goat cheese Follow with caramelized onions and top with diced bacon and parsley. Serve immediately
